Bison Eighth, Quarter, and Half Purchases

Our bison are 100% grass-fed and harvested at 2–2.5 years of age, which means they are naturally smaller than grain-fed or older animals—but this is intentional. Rather than maximizing weight, we prioritize quality, flavor, and nutrient density.

 

Our bison typically average around 975 lbs live weight, with a hanging hot weight (HHW) of about 550 lbs after removing inedible parts like the hide, head, and organs. Because bison have a heavier hide and head, their dressing percentage is lower than beef. From there, you can expect to take home roughly 250–280 lbs of finished, packaged bison meat (whole). All meat is cryovac sealed to ensure freshness and long-term freezer storage without freezer burn.

 

Bison are cut a bit differently than beef, resulting in a practical mix of products for everyday use—typically about 55% ground bison, 25% roasts, 17% steaks, and 3% other cuts like organs and soup bones. See breakdown of cuts below.

 

Buying in bulk helps you save money because the price per pound stays consistent—even for premium cuts like steaks and roasts, which retails for $27–55 per pound.

Our Harvesting Process

When you purchase a whole, half, or quarter bison, our animals are transported to a state-inspected facility, Farm Country Butchery, where they rest and graze for a few days before being humanely field harvested. This low-stress approach is one of the most ethical and respectful ways to harvest an animal.

Customers purchasing a whole or half bison can customize their cuts and choose to keep items like organ meats, hides, or bones, as long as the order is confirmed before processing. Quarters and eighths follow standard cut packages. Processing costs are paid directly to the butcher and outlined on the cut sheet. Once complete, your meat can be picked up at the ranch or delivered at one of our drop locations.

Our next harvest date is September 17, 2026, with meat being available the first to second week of October.

Below are our current bulk bison packages. A whole bison is not currently available, but please reach out to us to let us know if you are interested in purchasing a whole.

Bulk Bison pickup available in Wausau, Eau Claire, and Oshkosh, WI as well as pickup any time from the ranch in Rib Lake, Wisconsin. (Select pickup choice at checkout.)

1/8 Bison

Approx. 40 lbs at $19.50/lb

  • Ground: 26 lbs

  • Roasts (arm, chuck, round, sirloin): 8 lbs

  • Variety of steaks (t-bones, ribeyes, new york strips, tenderloins, sirloin): 4 lbs

  • Stew meat: 2 lbs

  • Organ meat (heart & liver): 1 lb​

 

An eighth bison needs about 1.5 cu ft of freezer space.

Total cost (including processing) = $862

  • Organ meat (heart & liver): 5 lbs.​

 

A half bison needs about 5 cu ft of freezer space.

Do you ship bulk orders?

At this time we do not ship bulk bison orders. We are located in northern Wisconsin and deliver every Saturday to Wausau. We will also have one delivery date for Eau Claire, WI, and one delivery date for Oshkosh, WI – all in October. You are also always welcome to pick up your order from our ranch in Rib Lake (by appointment only). Please specify which delivery location you prefer at checkout.

Do I get to pick my cuts?
Customizing your cuts is available for half bison orders only. When placing your deposit, select “custom cut sheet,” and we’ll send you a detailed cutting instructions form. From there, you can choose your preferences for steaks, roasts, ground bison, stew meat, and organ meats. We’ll guide you through the process to ensure your order meets your needs. Note that selecting your own cuts may result in additional processing fees.

How much freezer space will I need?

A helpful rule of thumb is to plan for 30–35 lbs of meat per cubic foot of freezer space.

  • A half bison typically requires about 4–6 cubic feet of freezer space.

  • A whole bison may need 10–12 cubic feet, depending on how the meat is cut and packaged.

Both chest and upright freezers work well

Does buying bulk save me money?

Buying in bulk helps you save money because the price per pound stays consistent—even for premium cuts like steaks and roasts, which retails for $27–55 per pound.
